Position Summary: You will be the in-house “Expert Baker” that will identify and trouble-shoot baking issues related to equipment and processes while working on the production floor.  Responsible for overseeing the technical team’s support of daily production operations to include the commercialization of new products, product improvements, and improvement initiatives.

Job Duties and Responsibilities

  • Required to work on Production floor and R&D Lab with a flexible schedule
  • Must have the ability to troubleshoot mechanical and functional issues in real time
  • Recognize and understand significance of problems and propose alternative solutions
  • Mentor and develop the Technical Services staff
  • Collect and analyze data to support baking production
  • Develop project objectives and strategies in response to business initiatives
  • Develop appropriate timelines for project delivery
  • Facilitate prototype development
  • Plan, lead and execute plant-scale production trials
  • Analyze results of experiments and translate then into actionable recommendations
  • Establish and document specifications for new products based on lab development and plant trials
  • Act as a technical resource for the cross functional teams
  • Drive innovations in Bakery Products via development of product technologies
  • Ensure the development, use- and sharing of best practice across all departments
  • Define, manage, and own projects through testing processes and implementation
  • Establish product budgets, allocate resources, set communication expectations, and follow up to achieve objectives
  • Coordinate process and product development with cross-function project team to expedite completion
  • Provide direction, critical thinking, and methodology to others on project team

Qualifications

Qualifications required:

  • AIB certification in Baking and work experience
  • Prior management experience
  • Minimum ten (10) years related experience in bakery manufacturing
  • Minimum ten (10) years proven experience in the commercialization of products
  • A combination of education, training and experience that results in demonstrated competency to perform the work may be substituted
  • Demonstrated technical achievement in the development of laminated dough (i.e., croissants, Danish, and cinnamon rolls) and development of batter-based products for the foodservice and in-store bakery markets
  • Good knowledge of product development process and methodologies
  • Proven ability to write process controls for all products
